This study, entitled “Determination of Glycemic Index and Glycemic Load of Tiesa (Pouteriacampechiana)” aims to acquire additional knowledge about tiesa and its nutritional properties. It was conducted from April 2014 to October 2014. Ten healthy individuals were used in the experiment. The sample collection was conducted at the Department of Medical Technology Laboratory, College of Nursing and blood samples was sent to Shechem Laboratory and Polymedical Center, INC. located at Isa, Ina, Ira bldg. J.P. Laurel St., Cor. C. Alvarez St. Nasugbu, Batangas.

The participants have undergone fasting before the consumption of tiesa. Through the use of capillary method, the blood glucose levels for the baseline data were taken before the consumption of the food sample (tiesa).The time interval of collecting the blood samples are as follows, 0 minute, 15 minutes, 30 minutes, 45 minutes, 60 minutes, 90 minutes, and 120 minutes with a total of seven pricks per trial. The collected blood samples were allowed to stand for five minutes in room temperature of 22°C to 25°C and were subjected to centrifugation for ten minutes. Serum was separated from the blood samples using a micropipette and kept at -20°C. Consumption of tiesa was done in three consecutive weeks, which serves as trial 1, trial 2, trial 3, respectively. In the fourth week of the trial, 50 grams of available carbohydrates using glucose solution was given to serve as the control. Samples were sent out in the Shechem Laboratory and Polymedical Center, Inc. Nasugbu, Batangas using clinical chemistry analyser. Results of the blood glucose level were obtained and calculated using Polynomial Curve Fitting of Area Under the Curve governing the glycemic index of food sample (tiesa).Results revealed that the glycemic index was 49.88. The obtained result from glycemic index was then divided into 100 and has been multiplied by the net carbohydrates formulating the glycemic load of tiesa which is 10.20 grams.
