This plant practice was conducted at Mofel's Food International Corporation at Governor's Drive, Langkaan I, Dasmarinas Cavite from June 26, 2006 to August 26, 2006 for a total of 460 hours. Mofel's is a family business producing different processed products like corned beef, hotdog, ham, bacon and others. The activity provided the student a firsthand experience in the actual operations of a meat processing plant producing corned beef.
The student-trainee was involved in quality assurance and control operations in the different sections of the plant. He also experienced working in the receiving area and in production sections involving cutting, curing, parboiling, hashing, mixing, filling, canning, cooking of meat, labeling and packaging. The student trainee was also involved in evaluating the Good Manufacturing Practices (GMP) compliance of the workers and inspection for the sanitation of the area and the equipment.
This report also includes the history, plant layout and organizational structure of the company. A descriptive summary of the activities undertaken is likewise presented which includes technical activities, problems encountered and some recommendations.
