The study -Extraction and Characterization Of Crude Extracts From Red Peel and Fles Dragon Fruits (Hylocereus Polyrhizus) was conducted to test the potential of the crude extracts of red peel and flesh dragon fruits as natural food color. The study aimed to:test the presence of pigment present in the crude extracts ;characterize natural pigment in terms of color ; and to evaluate the stability of natural food color from dragon fruit. The study prepared three treatments: Treatment 1(sample exposed to light), Treatment 2(sample refrigerated at 10 degrees Celsius) and Treatment 3(sample stored at room temperature).

The stability of the color was tested under colorimeter and had three readings to show the possible changes in terms of color. The phytochemicals were also tested under the supervison of Department of Science and Technology. Results showed that having Glycosides and Triterpenes present in the extract, probably the common pigments that are found in dragon fruit is present the extracted solution. On the other hand, stability testing results showed that the solution extracted is stable when not exposed to heat, light and oxygen.
