The study generally aimed to develop a batch-type coffee roaster for small-scale roasting that would automatically roast green beans. It was conducted to determine the effect of different levels of time and temperature in the performance of the machine and in the cup quality of the roasted coffee. The machine is made of stainless steel and galvanized iron on some parts. Its major parts include hopper, auger, roasting chamber, casing and electric band heaters. Other parts include AC motor, LCD display, push button switches, connecting wires and a thermocouple. The microcontroller circuit is made of PIC16F874/877 microchip. The chip is interconnected to relays, contactor, socket resistor, capacitors, transistors and diodes to form the unit. Software is also developed using the Assembly Language. The chief function of the program is to control and maintain the required roasting time and temperature. 5 Results revealed that the factor variables significantly affected the weight of beans after roasting, roasting capacity and degree of roast. The highest cup quality of 86.84 was obtained at a temperature of 225°C and a roasting time of 20 minutes. The roasting capacity of the machine is 10 kg/hr. The cost of fabricating the machine is PhP 23, 574.05. The cost of roasting per kilogram of coffee is PhP 7.00.
