This study assessed the operating characteristic of an improved multi-purpose food processor adapted for processing fruits and vegetables. The machine was evaluated to determine the performance capacity of the machine. The latest food processor is made up mostly of stainless-steel sheet and flat bar and operated by a 0.25 hp electric motor. The machine consists of the following essential parts: structural framework, blades, cover with hopper and plunger, collector, and electric motor. The food processor stands 0.55 m high and has a diameter of 0.30 m. The processor can grate, chip and strip fruit and vegetables. An additional blade on the surface of the rotating disk from two to three blades decreased the processing operation of the product sample. An increase in the angular speed (370 rpm, 568 rpm and 818 rpm) of the food processor increased the processing capacity of the machine. The processing efficiency of the improved multi-purpose food processor for chipping, stripping and grating is 93.61 %, 93.36 % and 92.75 %, respectively. The machine costs P 5,945.40, and a life span of eight years. Analysis revealed that the improved multi-purpose food processor is financially viable to the small-scale farmers.
