"Industrial microbiology is one of the important outgrowths of those fundamental researches conducted by Pasteur which have made his name the most highly revered in the whole realm of microbiology. Industrial microbiology or microbial biotechnology is the application of scientific and engineering principles to the processing of materials by microorganisms (such as bacteria, fungi, algae, protozoa and viruses) or plant and animal cells to create useful products or processes. The microorganisms utilized may be native isolates, laboratory-selected mutants or microbes that have been genetically modified using recombinant DNA methods. Enzymes are the spirit of living cells. No metabolic reaction occurs in the cell without them. The study of enzymes is a major challenge to students and teachers alike, thanks to the vast corpus of knowledge being accumulated in the field. The study and application of enzymes have assumed increasing importance both in medicine and in industry and a discussion of these aspects is therefore given prime importance. Enzyme technology broadly involves production, isolation, purification and use of enzymes (in soluble or immobilized form) for the ultimate benefit of humankind. In addition, recombinant DNA technology and protein engineering involved in the production of more efficient and useful enzymes are also a part of enzyme technology.
