Abstract: LAGANZO, JUBERT V. ANTIMICROBIAL SPECTRUM OF ISOLATED LACTIC ACID BACTERIA FROM FERMENTED SUBSTRATES AND GUTS OF COMMERCIAL FISHES. Undergraduate Thesis, Bachelor of Science in Biology, Major in Microbiology, College of Arts and Sciences, Cavite State University, Indang, Cavite. June 2019. Adviser: Dr. Yolanda A. Ilagan This study was conducted to determine the bacteria and fungi inhibited by lactic acid bacteria isolated from fermented substrates and guts of commercial fishes and to identify the selected bacteriocin-producing LAB isolates. Ninety-four presumptive LAB isolates from fermented substrates and guts of commercial fishes were screened for antimicrobial activity against representative cultures of Gram-positive and Gram-negative bacteria, yeasts, and molds using Direct Bacterial Assay. The isolates were observed to inhibit Salmonella Typhimurium ATCC 14028, Escherichia coli B1825, Staphylococcus aureus ATCC 12600, Bacillus subtilis 1514, Listeria monocytogenes LM3, Listeria monocytogenes NB6, Listeria monocytogenes NB40, Listeria innocua NBS, Listeria innocua NB15, Listeria innocua 026, Pseudomonas aeruginosa ATCC 27853, Micrococcus luteus 10240, and Fusarium oxysporum NGS. The isolates which showed antimicrobial activity against the test organisms were further screened for bacteriocin production using spot-on-lawn method. Three isolates, coded as YMUST, YakCA1, and YakBB4, were found to be bacteriocin-producers and were observed to inhibit Listeria monocytogenes NB6, Listeria monocytogenes NBAO, Listeria innocua NBS, Listeria innocua NB15, Listeria innocua 026, and Bacillus subtilis 1514. 16S rRNA sequences of the promising isolates suggests that they are Lactobacillus plantarum and Pediococcus acidilactici.
