The 460 hours of plant practice was conducted at Mofel's Food International Corp., located in Brgy. Langkaan II, Dasmarinas, Cavite. Being a trainee, she experienced being one of the QA Inspectors, which provided her exposure in the actual quality assurance operations and processing activities of the company specifically, training in receiving and inspection of raw materials, evaluation of the spices that will be used, monitoring the stuff weights, length, and diameters, maintenance of processing conditions, packaging monitoring and inspection. It also involves monitoring the Good Manufacturing Practices (GMP) compliance of the workers and inspection for the sanitation of the area and the equipment.
There are quality standards for the product that are used to ensure the product quality of the hotdogs. Some problems in the plants identified were improper cooking of the product, which causes wrinkling and gel separation, frequent breakdown of the equipment (Crepaco) which causes delay in the production and limited equipment in the laboratory rooms.
