Castillo.<br/>Fermented foods are popular and well-liked by the general public in many parts of the<br/>world, particularly in Asia. In the Philippines, fermented fishery products are called the bagoong<br/>(fish paste) and patis (fish sauce) which are generally used as condiments. The characteristics<br/>of this product differ depending on the region where it is made and consumed. (Olympia, 1992).<br/>Balayan is one of the municipalities in the province of Batangas that is popular for its Bagoong<br/>Balayan. One of the manufacturers there is the Panaligan's Patis & Bagoong Enterprise. How to<br/>produce their goods or components efficiently at low cost and high quality is the most<br/>challenging problem faced by producers today. Lean manufacturing practices are one promising<br/>method of solving this issue (Taj, 2007). The overall goal of lean manufacturing is to assist<br/>people in the food industry to make improvements in performance (Dubridge, 2017). Hence, this<br/>study aimed to analyze and implement improvements in the production process of Panaligan's<br/>Patis & Bagoong Enterprise. The researchers conducted an interview accompanied by a Plant<br/>Survey Company Evaluation Sheet in assessing enterprise' current system. Using Pareto<br/>Analysis, it was found that unnecessary movement of people and materials as well as looking<br/>for materials should be addressed in the problem-solving procedure. A why-why analysis was<br/>used to determine the root cause of the problem. Poor plant layout and no specific place for<br/>tools, materials, equipment and workstation has been identified as the root causes of the<br/>problem. The researchers implemented lean tools such as Kaizen and 55 methodology to<br/>address the problems and to further improve the enterprise. The Kaizen implementation reduced<br/>movement of workers and hence reduced wastage of time and distance. Moreover, a new plant<br/>layout was proposed by the researchers which resulted in improvements such as reduction of<br/>waste in the form of time, unnecessary motion, and transportation whereas the 5S<br/>implementation resulted in a clean and well- organized workplace for the enterprise. The<br/>implementation of lean tools such as Kaizen and 5s had a positive impact on the enterprise and<br/>improved its efficiency. The work environment becomes cleaner, more organized, and more<br/>enjoyable, as well as reduced wastage of time and distance for the worker resulting in higher<br/>employee job satisfaction. List of recommendations were given to further improve the study as<br/>well as the Panaligans Patis & Bagoong Enterprise operation efficiency. |
