Forty heads of cattle, 20 males and 20 females, were used in this study to determine the relationship of sex to the dressing percentage of cattle and the percentage age ratio of the different parts such as carcass, visceral organs after evisceration, blood, head, hide… to the liveweight of the animals. The experiment was conducted from january 1 to February 28, 1977 covering a period of two months at the Municipal Abattoir of Indang, Cavite. The dressing percentage of male cattle ran slightly higher than the female due to a higher carcass weight obtained. The percentage ratio of the different parts of the animals were summarized as follows. <br/><br/>PARTS MALE FEMALE<br/><br/>Viscera after evisceration 9.19% 10.84%<br/>Fecal matters obtained from evisceration 18.53% 19.74%<br/>Head 5.09% 5.22%<br/>Hide 7.79% 6.85%<br/>Blood 3.77% 3.58%<br/>Legs 2.27% 2.19%<br/>Tail 0.77% 0.91%<br/>Carcass 50.87% 48.77% |
