Ersando This study was conducted to determine the 1) socio—economic characteristics of the households, 2 ) family consumption level of poultry and eggs, 3) per capita consumption of poultry and eggs, 4) income— quantity elasticity and income—expenditure elasticity for poultry and eggs, and 5) the relationship between consumption pattern and some selected variables. A total of 100 families was taken at random from 5 selected towns of Cavite namely Silang, Amadeo, Indang, Naic and Tanza The mean average age of households was 27 years. The households had an average of 6 members. They had an average monthly income of ? 2, 540,000 Majority of them were aware of the nutritive value of poultry and eggs and considered it in the purchase of poultry and eggs. They purchased these products regularly from the public market. The family consumption level of poultry and (weekly) was 200 kilograms of poultry and 16 pieces. Of eggs on the averaged The per capita consumption averaged at 0033 kilogram of poultry and 2 pieces of eggs per week. The weekly expenditure for poultry and eggs were low. The average family expenditure per week was. P38000 for poultry end 218000 for eggs. In general, coefficients of income—expenditure elasticity for poultry and eggs were higher than the corresponding income—quantity elasticity. The family income affected the consumption level of poultry and eggs. Other factors such as average age of households, households’ size, sex composition of house— holds and degree of consideration of nutritive value in the purchase of poultry and eggs had no significant effect on the consumption level of poultry and eggs.
