Abstract: ABAS, ERICA RATCHEL S. Quality Assurance Operation in the Production of Frozen Red Bean Jam at KLT Fruits, Inc. Plant Practice Report. Bachelor of Science in Food Technology, Cavite State University, Indang, Cavite. April 2013. Adviser: Mrs. Aitee Janelle Reterta. A plant practice was conducted from November 12, 2012, to December 23, 2012, for 300 hours at KLT Fruits, Inc. located at First Cavite Industrial State, Brgy Langkaan, Dasmarinas City, Cavite. During the plant practice, the student was oriented on the company rules and regulation and good manufacturing practices (GMP). The student was also given a chance to monitor the production of frozen red bean jam and to conduct actual analysis of different finished food products. Microbial analysis and sampling were also done by the student. This plant practice enabled the author to improve self-discipline and self-confidence. The student learned to appreciate the role of food technologist at a food company.
