A natural convection dryer was constructed in Anuling, Mendez, Cavite and was evaluated at the Don Severino Agricultural College now Cavite State University, Indang, Cavite from May to June 1997.Specifically, it aimed to evaluate the drying performance of the dryer. The dryer consists of the following parts: drying platform, heat exchanger, chimney, and burner. The dryer was tested using coffee at varying depths of IC) cm, 15 cm, and 20 cm respectively. The fuel used was Charcoal. Results showed that the drying depth of coffee gave significant effect on the drying time, drying rate and fuel consumption of the dryer. Beat result cm drying of coffee was obtained at 10 cm depth, which gave the shortest drying time, highest drying rate and the least amount of fuel consumed. It has an average drying time of 35.67 hours, drying rate of MC/hr. and amount of fuel consumed at 15.33 kg. The drying temperature ranged from 7 (PC to 80-C. Th east of the dryer was P 12,298.00. It gave an annual revenue of P 64,837.50 and a net income of P 4,358.54. Payback period of the dryer was computed to be 2.8 years. The break even point was 1,706.64 hr/yr. The dryer had benefit cost ratio of 1.09
