Maintaining a clean work environment is critical in preventing foodborne illness. Bacteria can grow on unsanitary surfaces and then contaminate food. Just because a work surface looks clean does not mean that it is sanitary. Always ensure that you clean and sanitize a work area before starting to prepare food. Working in any food processing industry entails keeping up with target production for the day and working vigorously to make sure the food processed is on par with the standards for customers. Also, it requires that the workplace, the food being processed, and the whole workforce comply with the food safety and hygiene practices. The book explores the key elements of housekeeping as also its theoretical foundations and techniques of operations.
