Abstract: DILOY, APRIL JOY RODIS. Quality Control Operation in the Production of Hamburger Patties at LIMCOMA-Batangas Prime Inc. Plant Practice Report. Bachelor of Science in Food Technology, Cavite State University, Cavite Philippines. April 2004. Adviser: Prof. Fe N. Dimero. The 460 hours of the plant practice was conducted from November 20, 2003 to March 05, 2004 at LIMCOMA-Batangas Prime Incorporated at Banay-banay 1 San Jose Batangas. During the plant practice, the student was able to observe the over all processing operation for hamburger patties. As a trainee, she experienced being a Quality Control Inspector, which provided her exposure with the actual job in inspecting and monitoring processing activities for hamburger patties. The trainee was assigned to monitor the size of chopped meat prior to grinding. During grinding the hole diameter of the grinder plate was maintained. The student was also assigned in setting and monitoring time of mixing ground meat and other non- meat ingredients. She also evaluated hamburger patties in terms of size taste and palatability. The student was also given a chance to work in packaging and sealing of the product where she experienced to monitor the product weight and number of pieces per pack, identified defective label and foreign materials in the pack. She was also assigned to monitor proper storing and transferring of finished product. As a Quality Control Inspector, she was also trained to accomplish and submit monitoring and inspection reports.
