Abstract: The study aimed to determine the management practices involved in dressing broilers. A survey was conducted at Pedro Victa’s dressing house of broiler at Habay, Bacoor, Cavite. Personal interview of the owner and the actual observation of dressing chicken was noted, making them as the basis of this study. The plant is engaged in dressing chicken which are popularly known now as dressed or ready-to-cook-chicken. Observation and interview showed that sanitation and cleanliness is strictly enforced in the plant to prevent any contamination of the maet. Complete modern facilities are used to facilitate the work which resulted at the same time to the production of excellent quality of meat. This of course brings good profit to the owner. Products at the Victa’s plant are usually marketed in the nearby towns of Cavite. They are usually retailed to market vendors in the hospitals, restaurants, and in some well established cold stores.
