Abstract: RONARIO, DENISSE MAE S. Quality Assurance Operation of Tetra Fruit Juice Drink in Cabuyao Logistics and Industrial Center, Republic Flour Mill. Plant Practice Report. Bachelor of Science in Food Technology. Cavite State University, Indang, Cavite. April 2014. Adviser: Ms. Aitee Janelle E. Reterta. The student trainee underwent plant practice at Cabuyao Logistics and Industial Center, RFM Corporation located at Km. 47 Pulo, Cabuyao, Laguna for 300 hours. This plant practice aimed to acquire hands- on experience in conducting physico-chemical analysis and microbiological analysis of fruit juice samples; to develop trainee's skill in quality assurance; and to provide proper working attitude through interaction with other people inside and outside the plant. Microbial analyses such as swab testing and determination of total plate count, yeast and mold count, and E.coli were conducted. Determination of total soluble solids (*Brix), percent titratable acidity, pH value, vitamin C content and specific gravity, preparation and standardization of reagents were also done as part of quality assurance operation. Other activities such as receiving of doy pouches, tetra paper, corrugated cartons and straw were conducted. Documentation by filling up forms and logbooks was also performed by the trainee. The student trainee also developed proper working attitudes and behaviour like initiative, politeness, punctuality, and organization. Critical thinking and multi-tasking skills were also applied during the training to assure and maintain the most acceptable state of products starting from raw materials up to the final product.
