Abstract: KASAYSAYAN, EVELYN ERNI, Don Severino Agricultural College Indang, Cavite, April 1997. " Demand Analysis for Processed Meat in Selected Barangays of Indang, Cavite". Adviser: Mr. Gilchor P. Cubillo A study was conducted to: 1) determine the socio-economic characteristics of the consumers; 2) determine the level of consumption for processed meat; 3) determine the factors affecting the demand for processed meat; and 4) estimate the income , price and cross-price elasticity of demand for processed meat. A total of 120 respondents was taken from five selected barangays of Indang, Cavite, namely: Guyam Malaki, Mahabangkahoy Cerca, Lumampong Halayhay, Calumpang Cerca and Barangay IV. Respondents'age ranged from 20 to 64 with a mean of 46 years. Majority of the respondents obtained high school education. Average household size was six and the average weekly income was P1,649,38. Most of the consumers bought tocino and hotdog. Preferences and quality of processed meat were the primary reasons of consumers in purchasing the commodity. Most of the variables considered did not have significant effect on both the household and per capita processed meat consumption, except for the household demand for longanisa and tocino. Consumption of longanisa was found out to be significantly affected by the household size while consumption of tocino was affected by the price.
