The study entitled “ Effect of Stress Ethylene on Jackfruit Ripening” was done to determine which depth of stick insertion is most effective in enhancing the ripening of
jackfruit.
Fifteen newly harvested mature jackfruits were used. There were five treatments and 3 replications used ; TO — control ( no stick inserted) , T1 — 4 inches deep stick insertion, T2 — 6 inches deep stick insertion, T3 — 8 inches deep stick insertion; and T4 — 10 inches stick insertion.
The results of the study showed that stress ethylene had a great effect in accelerating the ripening of jackfruits. The depth stick insertion also had an effect in ripening of jackfruits. The deeper the stick insertion, the faster is the rate of ripening of jackfruit.
Stress ethylene induced ripening of jackfruit significantly affected the sensory properties of the fruit.
