This study was conducted 1) to determine some of the socio-economic characteristics of the consumers; 2) to determine how the consumption of Irish potato responds to price changes, price of related commodities, income of the consumers, and tastes and preferences; 3) to ascertain the degree of relationship that exists between the demand for Irish potato and some selected variables that are previously mentioned; 4) to evaluate the problems encountered by the consumers of Irish po Tato regarding its price changes, quality sellers treatment to the commodities and to the consumers; and 5) to propose possible solutions to the problems encountered by the consumers. Four towns in upland Cavite were selected as the place of the study. In each town, twenty-five respondents constituted as the samples. Respondent’s age ranged from 16 to 70 with the mean of 39-year-old and 45-year-old for the purchasers and non-purchasers, respectively. A higher fraction of the consumers obtained only elementary education. The household size of the consumer is five and an average monthly income of P2,235 and P1,636 for the purchasers and non-purchasers, respectively. The rate of consumption was four to five kgs. per month. It was based on weekly usage which was con- verted to monthly usage. It was also found out that most of the consumers substituted cassava and sweet potato while only a few used chayote as their substitute. Consumers' preferences in purchasing Irish potato were based on their tastes and preferences. It was also reported that other considerations in purchasing Irish potato were low price and quality. Most of the consumers stated that unstable price or price fluctuations were their primary problems in purchasing this commodity. The demand for Irish potato exhibited a negative relationship to the price of chicken, price of gabi, and family size. On the same respect, other variables such as price of potato, price of beef, price of pork and income were found to have a direct relationship. However, family size, income, price of sweet potato and price of own good were recorded to be statistically significant. Variations in the quantity demanded for Irish potato in the high-income group, was significantly attributed to price of potato, price of gabi, income and family size. A significant variation on the consumption of Irish potato for the low-income group, was explained by the prices of potato, beef and sweet potato.
