A plant practice was conducted from November 21, 2011 to January 13, 2012 for 300 hours at Coca-Cola Bottlers Philippines Inc. Central Laboratory Services at Brgy. Pulong Santa Cruz, Santa Rosa Laguna. During the plant practice the student was oriented with the company and was toured inside the whole laboratory. Hands-on activities on the quality assurance including monitoring of total soluble solids, torque, gas volume and inspection of containers of the soft drink products, monitoring of total
dissolved solids, pH and turbidity of the source water, digestion of simple syrup for the mineral analysis, assay for powdered juice, microbial analysis for source water and syrup, filth analysis for the soft drinks products and sensory evaluation of the product were conducted.
The student trainee developed skills on quality evaluation of the products and raw materials with reference to the standards and specifications of the company.
This plant practice enabled the author to have good personnel relation, to improve self-confidence and practice self-discipline. This also provided the author worthwhile experience and developed student’s appreciation of the role of food technologist in the food manufacturing industry.
