Abstract: MARGES, ANALIZA P. Quality Control Operation in the Production of Soursop Puree at Pure and Rich Food International Inc. Plant practice. Bachelor of Science in Food Technology. Cavite State University, Indang, Cavite. April 2005. Adviser: Prof. Fe N. Dimero. The trainee conducted four hundred-sixty hours of plant practice at Pure and Rich Food International Inc. located at Km 42 Governors Drive Brgy. Hugo Perez, Trece Martires City, Cavite. This plant practice was conducted to provide the student trainee with experience in actual quality control operations and processing activities. Specifically, quality control operation for soursop puree was observed. Such operations include inspection of raw materials, monitoring of storing and ripening conditions, washing, monitoring of puree blending, cooling, filling, packaging, and labeling activities. The trainee was also involved in monitoring and strict implementation of Good Manufacturing Practices (GMP). In addition to production line activities, actual experience in physico-chemical and microbial analysis were acquired. Exposure on the adherence to quality control standards as reference for the rejection and acceptance of the products were also learned by the student trainee.
