Abstract: VICEDO, ADELLE LYNN CREENCIA. Quality Operation in the Production of Banana Catsup at M.C.N. Distributors Co., Inc. Plant Practice Report. Bachelor of Science in Food Technology. Cavite State University, Cavite. April 2004. Adviser: Prof. Fe N. Dimero. Four hundred sixty hours of plant practice was conducted at M.C.N. Distributors Co., Inc. located at Pantoc, Mecauayan Bulacan. This plant practice served as a source of practical knowledge for the student trainee. The student was exposed to actual banana catsup, processing, specifically, receiving and inspection of raw materials, weighing and storing of ingredients. Hands-on experiences in monitoring process operation such as mixing, cooking and filling with the standard headspace were acquired. The student was also trained in inspection of label and condition of finished product including correct stocking of cartons. Physico-chemical analysis and microbial analysis of products were conducted to assure the good quality and safety of the banana catsup.
