Use of fishing methods varies, depending on eh types of fisheries, and can range from as simple process as gathering of aquatic organisms by hand picking o highly sophisticated fish harvesting systems, viz. aimed mid-water trawling or purse seining conducted from large fishing vessels. The targets of capture fisheries can range from small invertebrates to large tunas and whales. The term fish processing refers to the processes associated with fish and fish products between the time fish are caught or harvested, and the time the final product is delivered to the customer. Although the term refers specifically to fish, in practice it is extended to cover any aquatic organisms harvested from commercial purposes, whether caught in wild fisheries or harvested from aquaculture or fish farming. The handling, processing, and marketing of fish products are essential complementary functions of all food production systems. Women traditionally have played a major role in these activities. In most developing countries women dominate the markets either as buyers or sellers of food. For most women marketing is a secondary activity which provides the only source of cash income. The marketability of fish products is an important constraint in the development of aquaculture. Moreover, processing and marketing activities provide the greatest opportunities for employment within the aquaculture industry. The fundamental principles and technologies involved in fish harvesting and processing, the book gives a comprehensive overview to the subject.
