Ramos This study entitled “Characterization of Extracted Oil from Tamarind (Tamarindus indica) Seeds” was conducted at Binambangan St. Barangay IV, Indang, Cavite and the De La Salle University, Dasmarinas, Cavite, to determine the possibility of producing oil from Tamarind seeds. Specifically, it aimed to determine the percent yield of the oil, evaluate the sensory properties of the oil in terms of color and odor, and to analyze the chemical components. The oil was extracted by using a rotary evaporator. The oil was extracted for thirty minutes. The results revealed that the extracted oil produced a 1.11 percent yield and the major chemical components were furfural (38.2%), palmitic acid (14.8%), oleic acid (8.1%) and phenylacetaldehyde (7.5%). The odor of the extracted oil from tamarind seeds was highly detectable ‘and the color was dark brown.
