This study was conducted to: determine the physico-chemical characteristics of honey, pollen and the stingless bee hives; determine the fungal count of honey and pollen provisions on the three selected sites in Indang, Cavite; isolate and identify the fungi isolated from pollen provisions, honey, and adult stingless bees; compare the fungi isolated from honey, pollen and adult stingless bees from different sites of Indang, Cavite; and determine the relationship of the isolated fungi and the physico-chemical properties of the honey and pollen.
The results of the different physico-chemical parameters showed that T. biroi honey varies as follows: pH (3.70 -4.20), moisture content (36.08-50.6%), and sugar content (67.95 - 73.15 0B). Pollen physicochemical parameters also vary as follows: pH (3 67 -4.18) and moisture content (28.45-41.36%). The temperature inside the stingless bee hive is at 25.55-29.75 0C and the relative humidity is at 62-87.5%.
In honey, yeast counts range from 3.73 — 21.67 x 102 CFU/ml and mold counts ranges from 0.25-4.23 x 102 CFU/ml. In pollen, yeasts counts ranges from 4.46 - 21.27 CFU/g and molds counts ranges from 0.46 10.23 CFU/g.
The highest mold count is observed in Alulod (10 23 x 102 CFU/g) while the lowest at Daine (0.25 x 102 CFU/g). The highest yeast count is observed in Alulod (21.67 x 102 CFU/ml) while the lowest counts at Daine (3 73 x 102 CFU/ml).
Isolated fungi are under the genera Aspergillus, Penicillium, Mucor, Cladosporium, Candida, Kloeckera, and Saccharomyces. Among these, Aspergillus, Penicillium, Candida, and Saccharomyces were most dominantly found on honey, pollen and adult bees.The pH of the honey and pollen are highly correlated with the both yeast and mold counts. Moisture content, hive temperature and hive humidity are highly correlated with the yeast counts on pollen. Mold counts are highly correlated with the pH and moisture content of both honey and pollen samples.
