The study "Extraction of Essential Oils from Saba and Lakatan Banana Peelings" was conducted at the Physical Science Department from September 2009 to January 2010. It aimed to determine the possibility of producing essential oil out of banana peelings; determine the physical properties of the essential oil produced out of banana peelings; determine the level of acceptability of the essential oil produced out of banana peelings; determine if there is a significant difference between the physical properties of the essential oil out of lakatan and saba banana peelings; and determine if there is a significant difference between the level of acceptability of the essential oil out of lakatan and saba banana peelings. Using soxhlet extraction, the possibility of producing essential oil from banana peelings was proven. The percent yield of nine percent essential oil from lakatan peelings and four percent essential oil from saba peelings justified that essential oils can be produced out of banana peelings. Thirty college students evaluated the physical properties of the essential oil. In terms of clarity, significant difference between essential oils from lakatan and saba peelings was noted. This result supported the description of evaluators for lakatan peelings as very cloudy and essential oil from saba peelings as opaque. In terms of consistency and odor, test analysis revealed that essential oils from lakatan and saba peelings do not differ. Evaluators described the consistency of both essential oils as thin while the odor was described as both perceptible. Further physical analysis of the essential oils revealed that both treatments had a specific gravity of 0.992 and a boiling point of 87.5. A pH value of five (5) and seven (7) were obtained from essential oils produced from the peelings of lakatan and saba, respectively. In terms of solubility, both treatments were insoluble when tested with ether, chloroform and benzene, and highly soluble in water. Further, both essential oils were found to be slightly soluble in ethyl alcohol. Findings of the study also revealed that Treatment 1 (lakatan peelings) is more acceptable than Treatment 2 (saba peelings) in terms of clarity, odor and general acceptability since it obtained higher means for all categories. In terms of consistency, differences between treatments are not significant, that is, essential oils from lakatan and saba banana peelings have the same acceptability level.
