Technical evaluation of coffee processing machines in Cavite was done in the major coffee producing areas in Cavite. The four major areas are Alfonso, Mendez, Silang and Amadeo. The different processing machines present in these areas are, coffee pulpers, coffee dryers, coffee roaster and coffee grinders. Different machine peril)rmance indicators were measured in order to identify the different characteristics of the machines such as rated input and output capacities and efficiencies. The common brands of coffee pulpers used in Cavite were Jewels and Escueta. These pulpers have rotating cylinders with stationary members to pulp coffee berries. Based on the evaluation, Jewels has an average pulping efficiency of 59.28% while Escueta has 57%. The rated output pulping capacities were 279.65 and 290.41 for Escueta pulper and Jewels pulper respectively. In drying the common brands used were Masatoyo and Sun brand dryer. These are flat — bed drying with rated input capacities ranging from 212.77 to 625. Results in evaluation showed that Masatoyo has an average drying efficiency of 93.05 while Sun Brand dryer has 96.46. In roasting ccoffee, the Probat Roaster in Gourmet Café, Silang is the only roaster in Cavite. It has double-walled horizontal drum for roasting of beans. These roasting produced three roasting characteristic: the dark roast, the medium roast and the lightroast. In dark roast, it has a efficiency of 73.91 %, in medium roast 75.99 %, and in light roast 77 %. The last processing machines that were evaluated are the coffee grinders located at Gourmet Café, Silang, Cavite and the Boha-deer grinder in Mendez. Both grinders have granulators responsible in grinding the roasted beans. Results of evaluation showed that Almeda grinder had slightly higher grinding efficiency of 99.79% while Boha-beer had 99.1% Based on the economic profile of' the coffee processing machines, the highest net profit per year was obtained in roasting operation (P240,000), followed by pulping (PI 20,000), then grinding (P22,500) and drying (14,000). In pulping, most of the problems met by the processors were: presence of foreign materials that makes the blade break while in operation; and, belts are not tightly fitted that make rotating speed of the pulpers decrease correspondingly. In drying, the bed of the dryer often breaks. In roasting, the controller, often times, are not accurately functioning that makes the roasting quality undetermined. In grinding, the grinder, is sometimes "abused" that makes the blade thinner. In coffee processing machines, uses electricity, and consumes large amount of energy that increases cost of electricity.
