Abstract: The project, "Processing of Coffee Blends from Arabica, Robusta and Excelsa Varieties" was conducted at the Food Science and Technology of the Don Severino Agricultural College Indang Cavite This project was conducted to produce coffee blends from Arabica, Robusta and Excelsa varieties and to analyze cost and return of its small-scale production using simple village level technology and acquire knowledge and experience in processing coffee This study was conducted from January 17 to January 25, 19960 Twenty kilos of dried, dehulled coffee beans were used and purchased from Lipa Batangas- Process included are drying, roasting, grinding, and packaging. Drying incurred 2 0 loss a Percent loss due to cleaning was 15.5%0 The beans were roasted for four hours which incurred a 0 025% loss. Grinding and packaging caused a total loss of 2-5% The ground blends were packed at 500 g 2 50 kg and 125 g per pack which were sold at P200, P 100, and P505 respectively. Total production cost was P2,739025 while total sales was P2,900 realizing a net income of 160.75 equivalent to 5-87% return on investment.
