In recent years, the environmental problem of waste has been the biggest concern, due to its impact on the current and future society. One of the biggest contributors to waste is the fast-food chain industry, especially in food waste, since it ranked second, and has the highest number of business establishments in the country. The study was conducted from February 2021 to January 2022 in selected fast-food chains in Cavite. The study was conducted on the selected fast-food chains in Cavite. This study aimed to determine the following objectives: (a) describe the business profile in terms of years of operation, ISO certification, food products served, and the amount of food waste generated; (b) identify food waste management practices done by the selected fast-food chains in terms of preconsumer and post-consumer waste; (c) describe the environmental performance in the fast-food chains in terms of food waste reduction, energy, and water conservation; (d) compare the food waste management practices across the business profile; (e) analyze the effects of food waste management practices on environmental performance; and (f) determine the problems and challenges encountered in food waste management. Descriptive statistics, crosstabulation, and linear regression were used as the statistical treatment of data. However, a survey questionnaire was distributed to each participant, and sent through an online survey tool, specifically, Google forms. The selection of participants was based on the list of the City Government of Dasmarinas, wherein only registered fast-food chains were chosen in this study. Total enumeration sampling was used to determine, and examine the sample size, 112 fast-food chains, consisting of 1 store manager of each food chain, were considered partakers of this study. The study revealed that the majority of the fast-food chains in Dasmarinas are young firms, and are using ISO Certification 14001. These fast-food chains are following the standard operating procedure of food waste management, such as regular checking and monitoring of the inventory, practicing of FIFO (first-in, firstout) stock rotation system, proper storage for raw materials, controlling of food production, proper bins for wastes, holding a proper training for the employees about food waste management, proper segregation of food wastes, and using of post-banner, slogans, and posters to educate the crews, employees, and customers about food waste management. For the significant effect of food waste management practices on environmental performance, the result shows that food waste management practices, have a significant effect on food waste reduction, energy conservation, and water conservation. The major implication of this study is that, fast-food chains may be able to reduce and prevent the large generation of food waste, if they are ISO 14001 Certified, because this certification provides a standard operating procedure that will help the development of effective food waste management practices, and environmental management system, that can be implemented to any type of companies. These results have essential managerial implication, considering that ISO Certification is valuable for the food service industry, to ensure its environmental performance.
