Abstract: ESCOBIDO LIRA A. and MENDOZA PRINCES REGEAN G. Pilot Testing of Brown Sugar from Sugar Palm Sap. Thesis Study. Bachelor of Science in Food Technology, Cavite State University, Indang, Cavite. April 2013. Adviser: Prof. Fe N. Dimero. This study was conducted at Brgy. Kaytambog, Indang, Cavite from January to March 2013. This study discussed and enumerated the raw material and physical requirements in pilot scale production of brown sugar from sugar palm sap; described raw materials sources and production schedule from brown sugar palm sap; determined production cost and selling price; developed appropriate packaging material for brown sugar; described marketing strategy for brown sugar; developed quality control measures in brown sugar production; prepared cost and return analysis; prepared financial flow for project; and determined consumer acceptability. A total of 1,030 L of sap supplied by sugar palm sap tappers from Kaytambog Indang, Cavite for 38 days produced 103 kg of brown sugar by simple heating and evaporation process of fresh sugar palm sap, 13-16 °Brix. The brown sugar was packed in attractive glass jars of 200 g capacity. A complementary label was developed which provided an attractive packaging style. This influenced consumers to willingly buy the product. Pilot scale production of brown sugar from sugar palm sap requires PhP 30,931.00 production cost to produce 103 kg brown sugar which can give PhP 51, 500 total sales and net profit of PhP 20, 587.00 in 38 days.
