Fermented foods are popular and well-liked by the general public in many parts of the world, particularly in Asia. In the Philippines, fermented fishery products are called the bagoong (fish paste) and patis (fish sauce) which are generally used as condiments. The characteristics of this product differ depending on the region where it is made and consumed. (Olympia, 1992). Balayan is one of the municipalities in the province of Batangas that is popular for its Bagoong Balayan. One of the manufacturers there is the Panaligan's Patis & Bagoong Enterprise. How to produce their goods or components efficiently at low cost and high quality is the most challenging problem faced by producers today. Lean manufacturing practices are one promising method of solving this issue (Taj, 2007). The overall goal of lean manufacturing is to assist people in the food industry to make improvements in performance (Dubridge, 2017). Hence, this study aimed to analyze and implement improvements in the production process of Panaligan's Patis & Bagoong Enterprise. The researchers conducted an interview accompanied by a Plant Survey Company Evaluation Sheet in assessing enterprise' current system. Using Pareto Analysis, it was found that unnecessary movement of people and materials as well as looking for materials should be addressed in the problem-solving procedure. A why-why analysis was used to determine the root cause of the problem. Poor plant layout and no specific place for tools, materials, equipment and workstation has been identified as the root causes of the problem. The researchers implemented lean tools such as Kaizen and 55 methodology to address the problems and to further improve the enterprise. The Kaizen implementation reduced movement of workers and hence reduced wastage of time and distance. Moreover, a new plant layout was proposed by the researchers which resulted in improvements such as reduction of waste in the form of time, unnecessary motion, and transportation whereas the 5S implementation resulted in a clean and well- organized workplace for the enterprise. The implementation of lean tools such as Kaizen and 5s had a positive impact on the enterprise and improved its efficiency. The work environment becomes cleaner, more organized, and more enjoyable, as well as reduced wastage of time and distance for the worker resulting in higher employee job satisfaction. List of recommendations were given to further improve the study as well as the Panaligans Patis & Bagoong Enterprise operation efficiency.
