Abstract: PENALES, GRACE V. Quality Assurance Operation of Carrageenan at Accel Carrageenan Corporation. Plant Practice Report. Bachelor of Science in Food Technology, Cavite State University, Indang, Cavite. April 2016. Adviser: Mrs. Aitee Janelle E. Reterta, MS. The plant practice was conducted to broaden the student’s acquired knowledge in its institution and familiarize with the different existing processing technologies and equipments in the Accel Carrageenan Corporation that will guide the student in the future career. The student was able to acquire knowledge and skills in the production of carrageenan, conduct of physico- chemical analysis of carrageenan, as well as GMP monitoring and product formulation thru research and development of fruit flavoured jellies, jelly flan and coffee jelly. At first, the student was oriented with the company rules and regulations; and familiarized with the facilities that will be monitored and used as the student’s training area and equipments used during production, wherein the process of making seaweeds into carrageenan was also discussed. The student was tasked to be a process controller where the trainee can do hands- on activities inside the laboratory including the testing of the product quality. As a food technology student, the student was able to realized the real importance of their chosen field because the quality and safety of every food is on their hands. The student learned how to be professional as the trainee can handle the production team and was trusted to test for the quality of the company’s large- scale carrageenan.
