This plant practice was conducted at Bavaria Food Processing Philippines Incorporated at People’s Technology Complex, Barrio Maduya, Carmona, Cavite from November 10, 2003 to January 16, 2004 for a total of 460 hours. Bavaria is a family business producing different processed products like hotdog, longanisa and others. The activity provided the student a first hand experience on the actual operations of a meat processing plant producing hotdogs. The student-trainee was involved in the quality control operations in the different sections of the plant. She also experienced working in the receiving area to inspect NMIC, monitoring weights in meat preparation, monitoring the stuff weights, length and diameters; monitoring cooking, cooling and evaluation process; inspection of packaging, finished product monitoring on blast freezer and dispatching process. The student trainee was also involved in monitoring the Good Manufacturing Practices (GMP) compliance of the workers and inspection for the sanitation of the area and the equipment. This report also includes the history, plant layout and organizational structure of the company. A descriptive summary of the activities undertaken is likewise presented which includes technical activities, problems encountered and some recommendations.
